Even fat gringos have to cook at home. I absolutely loathe pork, so I thought that I would scour the internet to find the answer on how to prepare them for the family without shake-and-bake. Anything would be an improvement to eat those super-on-sale-must-buy porkchops that are sitting in the freezer, daring me to try to make them edible. The answer was unclear. I hate recipes that calls for ingredients nobody has ever heard of. So I took a little bit from a lot of recipes and came up with a hit! This recipe does however come with a warning: Cook in a well-ventilated area, or even outside if you can, this recipe will make your home smell like East India threw up in your living room for days.
INGREDIENTS
Pork Chops
Season All
Pepper
1 Large Red Onion
1 Tablespoon of Chili Powder (or if you cook like we do, about a heaping palmful)
1/2 Tablespoon of Cumin (or...half of how much chili powder you put in)
3-4 Garlic Cloves
2 Tablespoons of brown sugar (light or dark, lets not get technical here)
2 Cups-ish of chicken stock or chicken boullon
big 'ol tablspoon of butter or margerine (more or less, whatever you like)
baking pan
deep frying pan
(see? All things you probably have in yer kitchen!)
Preheat oven to 375
pan Sear your pork chops in olive oil salt and pepper until brown.
Toss in the oven to finish cooking (8-10 minutes usually)
In the same pan, add chopped red onion, chopped garlic, a little more olive oil, let onions and garlic cook down a bit, then throw in brown sugar, season all, pepper, chili powder and cumin, stir around and add the chicken stock.
lower heat, simmer sauce until the pork chops are ready, then add the butter right at the end.
we usually make some basmati rice & steamed veggies to go with it, also good with any rice or mashed potatoes.
put the rice or mashed potatoes on the plate, pork on top, sauce on top. Devour.
Give it a try, its really tasty, kinda Indian food-esque, but don't say I didn't warn ya about the smell...
